The process of producing craft beer
To understand how to preserve craft beer or our home-made beer, we need to be clear about its production process. The first step is to search for quality raw materials.
Today, there are different types of beer, such as non-alcoholic, agricultural and double malt; the continuous search for local and zero-mile raw materials has paved the way for the extraordinary range of different aromas that allow us to characterize the products in a surprising way. Craft beer is an alternative to beer produced on an industrial scale, producing a type that enhances local raw materials.
Producers know it well, producing beer is an art and for this reason we asked Filippo Ghidoni, owner of the agri-brewery La Morosina, what differentiates a craft beer producer and how the beer production process takes place.
The Cascina Morosina farm was founded in 1600 and is located inside the Ticino park on the outskirts of Milan. Its history has always been linked to work and agricultural tradition.

Does the beer fermentation process continue after bottling?
“The fermentation process can last even after bottling, depending on the style of beer. It starts from a minimum of two weeks up to two and a half months”
During fermentation, the yeast transforms sugars into alcohol and carbon dioxide but also gives life to a whole series of secondary products that influence the flavor of the beer.
What is the ideal temperature for an optimal fermentation process of craft beer? How to store it?
“Craft beer can continue the fermentation process at a temperature above 23°C or 24°C, the important thing is not to exceed 30°C and possibly keep it away from light sources”

Some tips on how to enjoy craft beer
“The first tip I can give is not to drink it too cold; an adequate temperature is around 6°C. Then pour it into the glass trying to make it form a nice compact foam; the right filling of a glass or mug of beer should occur in three moments”
